Mandarin Orange and Red Onion Salad
Servings: 4 to 6
Ingredients:
- 1 cup almonds
- 1 tablespoon butter
- 2 tablespoons lemon juice
- 1 teaspoon Dijon mustard
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
- 1/2 cup vegetable oil
- 1 head romaine lettuce, torn into pieces
- 1 can (11 ounces) mandarin orange segments, drained
- 1 small red onion, thinly sliced, rings separated
Directions:
- Saute almonds in butter until golden; reserve.
- Combine next 5 ingredients.
- Whisk in oil.
- Combine lettuce, oranges, onion and almonds.
- Toss with dressing.
