Pumpkin Pie
Recipe from Sharon McGuire / Ruth Bingham
Yield: 1 pie
Ingredients:
- 4 eggs beat slightly
- 2 cups pumpkin or 1 can pumpkin
- 1 cup sugar
- 1/2 cup dark corn syrup
- 1 tsp. vanilla
- 1/2 tsp. cinnamon
- 1/4 tsp salt
- 1 cup chopped pecans
- 1 deep dish pie crust
Directions:
- Preheat oven to 350°
- NOTE: For crispier crust, brush pie crust with egg white and bake for 7 minutes prior to filling with custard. OPTIONAL
- Combine the first 7 ingredients (except pecans)
- Pour into crust and top with pecans
- Bake approximate 40 minutes until set
