Basic Crepes

We saw crepes being made in San Francisco many years ago. We still enjoy making crepes using this recipe. |
Yield: 16 ( 6-inch) crapes
Ingredients:
Basic Crepe
- 1 cup all-purpose flour
- ¼ teaspoon salt
- 1 ¼ cups milk
- 2 large eggs
- Cooking spray
Filling
- Nutella
- Whipped Cream
- Banana
- Powdered sugar
Directions:
- Combine all crepe ingredients except cooking spray in blender. Process 10 seconds. Scrape down sides and process 10 seconds or until smooth
- Refrigerate batter 1 hour to allow flour particles to swell and soften so the crapes have light texture
- Spray 6 inch pan with cooking spray and heat over medium heat until just hot; not smoking
- Pour 2 tablespoons batter into pan and tilt pan in all directions
- Cook about 30 seconds
- Crepe is ready for flipping when it can be shaken loose from pan
- Flip and cook 30 seconds on other side
- Place on a towel to cool
- Stack between layers of waxed paper to prevent sticking
- Repeat
- Add filling
- Spread Nutella on crepe
- Slice banana over Nutella
- Add whipped cream
- Roll crepe
- Sprinkle with powdered sugar
