Apple Enchiladas

Yield: 6 servings
Ingredients:
- 1 (21-ounce) can apple pie filling
- 6 (8 inch) flour tortillas
Sauce
- 1/3 cup butter
- 1 tsp cinnamon
- ½ cup sugar
- ½ cup light brown sugar
- ½ cup water
Directions:
- Spoon fruit filling down center of tortillas
- Roll up and place, seam side down, in a lightly greased 8" x 8" baking dish
- Combine all of the sauce ingredients in medium sauce pan and bring to a boil; reduce heat and simmer, stirring constantly, for 3 minutes
- Pour sauce over enchiladas and let stand for 30 minutes
- Bake at 350° F for 20 minutes
- Serve topped with vanilla ice cream
