Jerome's Cookies

This is a recipe that my mom made many years ago. I was not sure if it was as good as I remembered. After making it recently, I discovered that it is still a great recipe. I do not know why they are called Jerome's cookies. |
Ingredients:
Filling:
- 1 1/2 stick margarine
- 1 cup sugar
- 1 egg
- 1/2 cup canned milk
- 1 cup chopped nuts
- 1 cup fine coconut
- Graham Crackers (2 packs whole and 1 cup Graham cracker crumbs)
Icing:
- 2 cups powdered sugar
- 1/2 stick margarine melted
- 3 TBSP canned milk
- 1 tsp vanilla
Directions:
- Line 9x13 pan with whole Graham crackers
- Make the Filling
- Melt margarine in small pot
- Add sugar
- Beat egg into milk and add to butter and sugar mixture
- Bring mixture to a boil, stirring constantly until thick
- Add nuts and coconut and 1 cup Graham cracker crumbs
- Mix good and pour over whole crackers
- Place layer of whole Graham crackers on top of filling
- Make the Icing
- Mix the icing ingredients
- Pour over the layer of crackers
- Place in refrigerator to chill.
- Cut into squares.
