Date Pecan Oatmeal Cookies
- 2 cups all-purpose flour
- 2 cups quick-cooking oats
- 1 teaspoon ground cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, room temperature
- 1 cup granulated sugar
- 1/4 cup light brown sugar, packed
- 2 large eggs
- 1/4 cup milk
- 1 tablespoon molasses
- 2 cups chopped dates
- 1 1/2 cups chopped pecans
PREPARATION:
Heat oven to 350°. Combine the flour, oatmeal, cinnamon, baking powder, baking soda, and salt. In a large bowl, with electric mixer, beat butter and sugars at medium speed until light and fluffy. Add eggs one at a time, beating well after each addition.
Add 2 cups of the flour mixture, 1 cup at a time. Add milk and
molasses, then add remaining flour mixture 1 cup at a time. Beat just
until ingredients are mixed. Stir in dates and pecans. Drop rounded
tablespoons of the cookie dough about 1 1/2 inches apart on greased baking
sheet. Bake in 350° oven for about 15 minutes or until bottom and edges
are lightly browned. Remove to wire racks to cool completely.

about 4 dozen cookies.
