Quick and Easy Peach Cobbler

Recipe from Lee Ann Meckley

Yield: 8 to 10 servings

Ingredients:

  • 1/2 stick butter
  • 1 cup flour
  • 1 cup sugar
  • 1 cup milk
  • 1 teaspoon baking powder
  • 1 egg
  • 1 large can peaches with light syrup or 8 fresh peaches - peeled, pitted and sliced into thin wedges

Cinnamon Sugar

  • 3 tablespoons white sugar
  • 1 teaspoon ground cinnamon

Directions:

  1. Peal peaches
    1. Easy way to peal Peaches - Place the peaches in boiling water for about 60 seconds, remove and plunge into cold water. The skins should slip right off.
  2. Preheat oven to 350°
  3. Melt butter in 9x13 oblong Pyrex baking dish.
  4. Mix flour and sugar thoroughly.
  5. Stir in milk and egg until well blended, do not beat.
  6. Pour into dish over melted butter. (Do not stir.)
  7. Pour heated peaches over this. (Do not stir.)
  8. Optional: Sprinkle cinnamon sugar on top.
  9. Bake at 350 degrees for 50 minutes.
