Mixed Berry Cobbler on the Grill
Yield: 8 servings
Ingredients:
- 1 1/2 cup Bisquick®
- 1 1/2 cup sugar divided into 2 - 3/4 cups
- 3/4 cup strawberry nectar (Kerns®)
- 1 tsp vanilla extract
- 1/2 cup (1 stick) butter
- 1 can (21 oz) strawberry pie filling
- 1 cup frozen mixed berries, thawed
- vanilla ice cream
Directions:
- Whisk together baking mix, 3/4 cup sugar, strawberry nectar and vanilla until smooth.
- Place a 10" cast iron skillet on the hot grill and add butter.
- When butter has melted, stir in remaining 3/4 cup sugar.
- When sugar mixture bubbles, stir in pie filling and mixed berries.
- Pour baking mix batter over the berries.
- Close grill and bake for 20 - 30 minutes or until golden brown and toothpick comes out clean.
- Cool for 1 hour and serve with ice cream.
- Optional: Bake 350° 35 to 40 minutes
