Microwave Toffee
Recipe from Southern Living Dec 92 page 150
Yield: 1 pound
Ingredients:
- ¾ cup chopped pecans divided
- 1 stick (1/2 cup) butter
- 1 cup sugar
- ¼ tsp salt
- ¼ cup water
- ¾ cup semisweet chocolate chips
- Extra butter for greasing pans
Directions:
- Butter 9" buttered spring form pan
- Sprinkle ½1/2 cup pecans in pan
- Butter 2 ½ quart bowl
- Add butter, sugar, salt and water to bowl and DO NOT stir
- Microwave 9-11 minutes or until light brown
- Pour over pecans in spring form pan
- Sprinkle chocolate chips over sugar mixture and let stand 1 minute or until soft and spread over sugar mixture
- Sprinkle ¼ cup chopped pecans
- Cool
- Break into bite size pieces
