Peanut Brittle

Yield: 1 pound

Ingredients:

Lightly grease cookie sheet with butter
In 1½ quart casserole, stir together
- 1 cup sugar
- 1/2 cup white corn syrup
Microwave at High for 4 minutes
Stir in:
- 1 cup salted, roasted peanuts
- or
- 1 cup raw peanuts and 1/8 tsp salt
Microwave at High for 3 to 5 minutes
Add:
- 1 TBSP butter
- 1 tsp vanilla
Microwave at High for 1 to 2 minutes - Peanuts will be lightly browned and syrup very hot.
Add:
- 1 tsp baking soda
Gently stir until light and foamy.
Pour mixture onto cookie sheet
Cool 30 minutes to 1 hour
Break into small pieces and store in air tight container.
