Peanut Brittle
Yield: 1 pound
Ingredients:
- Lightly grease cookie sheet with butter
- In 1½ quart casserole, stir together
- 1 cup sugar
- 1/2 cup white corn syrup
- Microwave at High for 4 minutes
- Stir in:
- 1 cup salted, roasted peanuts
- or
- 1 cup raw peanuts and 1/8 tsp salt
- Microwave at High for 3 to 5 minutes
- Add:
- 1 TBSP butter
- 1 tsp vanilla
- Microwave at High for 1 to 2 minutes - Peanuts will be lightly browned
and syrup very hot.
- Add:
- Gently stir until light and foamy.
- Pour mixture onto cookie sheet
- Cool 30 minutes to 1 hour
- Break into small pieces and store in air tight container.
