Pecan Pie Bars

Yield: 48 bars
Directions:
- Mix well together until it resembles fine crumbs:
- 2 ½ cups flour
- ½ cup sugar
- 1 cup cold butter (cut into pieces)
- ½ tsp. salt
- Press firmly into 15x10x1 pan, sprayed with Pam.
- Bake at 350 for 23-25 minutes or until golden brown
- In large bowl, beat together:
- 4 eggs
- 1 ½ tsp. vanilla
- Stir in 2 ½ cups coarsely chopped pecans
- Immediately pour this over hot crust. Spread evenly.
- Bake at 350° for 25 minutes or until filling is firm around the edges.
- Cool completely.
- Cut into 2 x 1 ½ inch bars
