Lime Bars
Yield: 16 bars
Ingredients:
Crust:
- 1 1/2 cup graham cracker crumbs
- 6 tablespoons salted butter, melted
- 1/4 cup sugar
- zest of one lime
Filling:
- 2 large egg yolks
- 1-14 oz. can fat free sweetened condensed milk
- 1/2 cup lime juice
Directions:
- Heat oven to 350° F.
- Grease an 8" square pan and line with parchment paper so that the paper hangs over the edges.
- Combine the cracker crumbs, butter, sugar, and zest and press into pan, pressing the crust 1" up the sides of the pan.
- Bake for 10 minutes.
- Allow to cool completely.
- Mix the egg yolks and condensed milk.
- Stir in the lime juice.
- Pour the filling into the crust.
- Bake for 15 minutes, or until set.
- Cool to room temperature, then chill for at least one hour or overnight.
- Pull the bars out of the pan and cut into 16 squares and arrange on platter.
