Pumpkin Bread

Recipe from Sharon McGuire

Yield: 48 mini muffins
5 mini loaves
3 regular loaves

Ingredients:

5 eggs
3/4 c. vegetable oil
1 can pumpkin (15oz)
2 c. all purpose flour
2 c. sugar
6 oz vanilla pudding
1 t. baking soda
1 t. cinnamon
1/2 t. salt
Chopped nuts

Directions:

Beat eggs, oil & pumpkin until smooth
Sift dry ingredients together and add to pumpkin mixture
Bake at 325° F. Mini muffins take approximate 20 minutes.
