Pumpkin Bread
Recipe from Sharon McGuire
Yield: 48 mini muffins
5 mini loaves
3 regular loaves
Ingredients:
- 5 eggs
- 3/4 c. vegetable oil
- 1 can pumpkin (15oz)
- 2 c. all purpose flour
- 2 c. sugar
- 6 oz vanilla pudding
- 1 t. baking soda
- 1 t. cinnamon
- 1/2 t. salt
- Chopped nuts
Directions:
- Beat eggs, oil & pumpkin until smooth
- Sift dry ingredients together and add to pumpkin mixture
- Bake at 325° F. Mini muffins take approximate 20 minutes.
