Banana Bread

Ingredients:

  • 1 1/2 cups flour
  • 2 1/4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1/2 cup wheat germ
  • 5 tablespoons butter
  • 2/3 cup sugar
  • 1/2 cup brown sugar
  • 2-3 mashed ripe bananas
  • 2 eggs, beaten
  • 1 teaspoon vanilla
  • 1 cup chopped walnuts or pecans

Directions:

  1. Preheat oven to 350° F.
  2. Grease and flour 8½" x 4½" loaf pan or 24 muffin tins.
  3. Sift the flour, baking powder, salt and cinnamon into a bowl.
  4. Stir in wheat germ.
  5. In another bowl, beat the butter with sugar.
  6. Add mashed bananas, eggs and vanilla and mix well.
  7. Add dry ingredients and blend.
  8. Add nuts.
  9. Spoon into loaf pan or muffin tins.
  10. Bake about 1 hour for loaf pan and about 20 - 25 minutes for muffin tins.
  11. Cool in the pan for 5 minutes and cool on wire rack.
