Mushroom Strudel

Yields 12 slices.
Ingredients for Mushroom Filling
- 6 c. mushrooms minced
- 1 t. salt
- 1/4 t. curry powder
- 6 T. Sherry
- 4 T. shallots, chopped
- 4 T. unsalted butter
Directions
- Saute above ingredients until liquid is gone
- Cool
- Add
- 1 c. sour cream
- 3 Tbsp dry bread crumbs
- Refrigerate overnight
Ingredients
- 1/2 c. unsalted butter (1 stick)
- 1 c. dry bread crumbs (3 pieces of toast)
- 1 package phyllo dough
Directions to Assemble
- Unwrap phyllo dough carefully
- Place a sheet of dough on large breadboard.
- Brush with melted butter and sprinkle with bread crumbs
- Repeat until you have 4 layers
- Spoon 1/2 mushroom mixture onto one narrow end of the dough.
- Turn long sides of dough in about 1 inch to seal filling
- Roll dough up much like a jelly roll.
- Place on lightly greased pan with sides.
- Brush with roll with butter and sprinkle with bread crumbs.
- Score roll to serve 6.
- Repeat process for 2nd half.
- Bake at 375° for 40 minutes.
- Cut into slices and garnish with sour cream and chopped parsley.
