Mushroom Strudel

Yields 12 slices.

Ingredients for Mushroom Filling

  • 6 c. mushrooms minced
  • 1 t. salt
  • 1/4 t. curry powder
  • 6 T. Sherry
  • 4 T. shallots, chopped
  • 4 T. unsalted butter

Directions

  1. Saute above ingredients until liquid is gone
  2. Cool
  3. Add
    • 1 c. sour cream
    • 3 Tbsp dry bread crumbs
  4. Refrigerate overnight

Ingredients

  • 1/2 c. unsalted butter (1 stick)
  • 1 c. dry bread crumbs (3 pieces of toast)
  • 1 package phyllo dough

Directions to Assemble

  1. Unwrap phyllo dough carefully
  2. Place a sheet of dough on large breadboard.
  3. Brush with melted butter and sprinkle with bread crumbs
  4. Repeat until you have 4 layers
  5. Spoon 1/2 mushroom mixture onto one narrow end of the dough.
  6. Turn long sides of dough in about 1 inch to seal filling
  7. Roll dough up much like a jelly roll.
  8. Place on lightly greased pan with sides.
  9. Brush with roll with butter and sprinkle with bread crumbs.
  10. Score roll to serve 6.
  11. Repeat process for 2nd half.
  12. Bake at 375° for 40 minutes.
  13. Cut into slices and garnish with sour cream and chopped parsley.
