Marinated Asparagus

Yield: 4 servings

Ingredients:

  • 1 pound fresh asparagus spears
  • 3 TBSP vinegar
  • 1/4 cup vegetable oil
  • 1/2 tsp salt
  • 1/4 tsp white pepper
  • 2 TBSP diced pimiento
  • 1 TBSP dried parsley flakes
  • shredded lettuce

Directions:

  1. Snap off tough ends of asparagus
  2. Cook asparagus covered in boiling water 8-10 minutes or until crisp tender
  3. Drain
  4. Combine next 6 ingredients
  5. Pour over asparagus
  6. Marinate overnight
  7. Serve over shredded lettuce
