Cucumber Spread Appetizer

Ingredients:

  • 2 cups finely chopped seeded cucumber, well drained
  • 1 cup mayonnaise
  • 1/4 cup sour cream
  • 1 teaspoon salt
  • crackers
  • Optional Toppings
    • thinly sliced cucumber
    • chopped red onion
    • chunks or small slices turkey, ham or drained pimiento

Directions:

  1. Combine minced cucumber, mayonnaise, sour cream, and salt; blend well.
  2. Spread cucumber spread on crackers
  3. Top with thin slices of cucumber, turkey, ham, or pimiento, if desired.
