Lettuce Wraps

Lettuce WrapsYields: 4 servings

Ingredients:

  • 1 pound Ground Turkey
  • 2 Tablespoons Peanut Oil
  • 1 small Onion diced
  • 1 clove Garlic, minced
  • 1" long piece of Fresh Ginger
  • 1 Red Pepper diced
  • 1/2 cup Diced Water Chestnuts
  • 3 Tablespoons Chinese Cooking Wine
  • 4 Tablespoons Soy Sauce
  • 1 Tablespoon Oyster Sauce
  • 1 Tablespoon Peanut Chili, Or Satay, Sauce
  • 1 Tablespoon Hoisin Sauce
  • 1 teaspoon Sesame Oil
  • 1 head Iceberg Lettuce

Directions:

  1. Dice the onion and red pepper.
  2. Drain and rinse the water chestnuts.
  3. Mince the garlic and the ginger.
  4. Wash lettuce.
  5. Mix together the soy sauce, oyster sauce, peanut chili sauce, hoisin sauce and the sesame oil.
  6. Heat a wok over medium-high heat.
  7. Add the peanut oil to the pan, allow it to heat up for a minute, then add the diced onion.
  8. Cook the onion in oil 4 or 5 minutes.
  9. Add garlic and ginger and stir fry for 30 seconds.
  10. Add the ground meat and brown.
  11. Add the red pepper and water chestnuts and cook 3 or 4 minutes.
  12. Add the Chinese cooking wine and cook about 1 minute.
  13. Add in the sauce and cook for 2 or 3 minutes.
  14. Add a teaspoon or two of cornstarch if it needs thickening.
  15. Serve with the lettuce: take one leaf and add a few heaping spoonfuls of the meat mixture, fold up.
  16. Serving with steamed rice.
