Date Pecan Oatmeal Cookies

  • 2 cups all-purpose flour
  • 2 cups quick-cooking oats
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 1/4 cup light brown sugar, packed
  • 2 large eggs
  • 1/4 cup milk
  • 1 tablespoon molasses
  • 2 cups chopped dates
  • 1 1/2 cups chopped pecans

PREPARATION:

Heat oven to 350°. Combine the flour, oatmeal, cinnamon, baking powder, baking soda, and salt. In a large bowl, with electric mixer, beat butter and sugars at medium speed until light and fluffy. Add eggs one at a time, beating well after each addition.

Add 2 cups of the flour mixture, 1 cup at a time. Add milk and molasses, then add remaining flour mixture 1 cup at a time. Beat just until ingredients are mixed. Stir in dates and pecans. Drop rounded tablespoons of the cookie dough about 1 1/2 inches apart on greased baking sheet. Bake in 350° oven for about 15 minutes or until bottom and edges are lightly browned. Remove to wire racks to cool completely.
Makes about 4 dozen cookies.
