Peanut Brittle

Yield: 1 pound

Ingredients:

  1. Lightly grease cookie sheet with butter
  2. In 1½ quart casserole, stir together
    • 1 cup sugar
    • 1/2 cup white corn syrup
  3. Microwave at High for 4 minutes
  4. Stir in:
    • 1 cup salted, roasted peanuts
    • or
    • 1 cup raw peanuts and 1/8 tsp salt
  5. Microwave at High for 3 to 5 minutes
  6. Add:
    • 1 TBSP butter
    • 1 tsp vanilla
  7. Microwave at High for 1 to 2 minutes - Peanuts will be lightly browned and syrup very hot.
  8. Add:
    • 1 tsp baking soda
  9. Gently stir until light and foamy.
  10. Pour mixture onto cookie sheet
  11. Cool 30 minutes to 1 hour
  12. Break into small pieces and store in air tight container.
