Razz-Ma-Tazz Bars

Yield:16 bars

Ingredients:

  • 1/2 cup butter
  • 2 cups white chocolate morsels, divided
  • 2 eggs
  • 1/2 cup sugar
  • 1 cup flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon almond extract
  • 1/2 cup seedless raspberry jam
  • 1/4 cup toasted, sliced almonds

Directions:

  1. Preheat oven to 325 degrees. Grease and sugar a 9-inch square pan.
  2. Melt butter in microwave-safe bowl on high for one minute. Stir.
  3. Add 1 cup morsels. Let stand. Do not stir.
  4. Meanwhile, beat eggs in large mixing bowl until foamy. Add sugar; beat until light lemon-colored (about 5 minutes).
  5. Stir in morsel-butter mixture. Add flour, salt and almond extract.
  6. Mix at low speed until combined.
  7. Spread 2/3 of batter into pan. Bake for 15-17 minutes or until light golden brown around edges.
  8. Heat jam in microwave on high 45 seconds. Stir. Spread over warm crust.
  9. Stir remaining morsels into remaining batter. Drop spoonfuls of batter over jam.
  10. Sprinkle with almonds. Bake for 25 to 30 minutes or until edges are browned.

Cool completely in pan. Cut into 16 bars.
