Lime Bars

Yield: 16 bars

Ingredients:

Crust:

  • 1 1/2 cup graham cracker crumbs
  • 6 tablespoons salted butter, melted
  • 1/4 cup sugar
  • zest of one lime

Filling:

  • 2 large egg yolks
  • 1-14 oz. can fat free sweetened condensed milk
  • 1/2 cup lime juice

Directions:

  1. Heat oven to 350° F.
  2. Grease an 8" square pan and line with parchment paper so that the paper hangs over the edges.
  3. Combine the cracker crumbs, butter, sugar, and zest and press into pan, pressing the crust 1" up the sides of the pan.
  4. Bake for 10 minutes.
  5. Allow to cool completely.
  6. Mix the egg yolks and condensed milk.
  7. Stir in the lime juice.
  8. Pour the filling into the crust.
  9. Bake for 15 minutes, or until set.
  10. Cool to room temperature, then chill for at least one hour or overnight.
  11. Pull the bars out of the pan and cut into 16 squares and arrange on platter.
