Marinated CheeseMarinated Cheese

Yield: 12 - 16 Appetizers

Ingredients:

  • Marinade
    • 1/2 cup olive oil
    • 1/2 cup white wine vinegar
    • 3 TBSP or more of chopped fresh parsley
    • 3 TBSP or more minced green onion
    • 1 tsp sugar
    • 3/4 tsp dried basil
    • 1/2 tsp salt
    • 1/2 tsp black pepper
    • 3 cloves garlic, minced
    • 1-2oz jar diced pimiento, drained
  • 1-8 oz package cream cheese
  • 1-8 oz block cheese - can use cheddar cheese, white cheddar cheese, colby cheese
  • Assorted crackers

Directions:

  1. Combine the ingredients for the marinade
  2. Cut the block of cheese in half lengthwise. Cut crosswise into 1/4 inch thick slices; Repeat the process for the cream cheese.
  3. Arrange the slices of cheese standing on edges alternating cheese and cream cheese in shallow dish.
  4. Pour marinade over cheese slices
  5. Cover and refrigerate at least 8 hours
  6. Serve with assorted crackers
